What is a Micro-Green?
Our Micro-greens cup is a variety of organic seeds which are sown closely together. The very young leaves can be cut and eaten when they are between 1/2"- 3" in height. At this stage they are not only succulent and full of flavor, they are also highly nutritious.
The seedling leaves can have up to twice the vitamin content of mature leaves. "Cut-and come again” is an umbrella phrase to describe the ability for micro-greens to re-sprout when leaves are cut, up to three or four times.  Please gently snip off a portion (about 35% at a time) of micro-green leaves and use as a garnish or toss in salads. The leaves will re-sprout if kept in a sunny spot and watered daily. Cups are also ready to transplant into a garden environment and grow to maturity upon purchasing.

ARUGULA
A staple salad green, lovely in panini sandwiches or tossed with fresh tomatoes. Has a sweet spicy flavor with a light horseradish hint when harvested early.
Arrow-shaped leaves and white flowers are all edible.
Great for fall and winter gardens.

OSAKA PURPLE MUSTARD
Large, beautiful, savored, purple leaves are pungent and sharp.
Use as a micro-green in salads or bunch for steaming or stir-frying when mature. An attractive addition to braising mixes. A cool-weather crop,
but bolt-resistant in the heat.

MIZUNA
Beautiful and feathery, this Japanese green has a mild spicy mustard flavor
and is currently popular in Vietnamese cuisine.
Stir fry with basil and assorted Asian vegetables.

PAC-CHOI
With emerald green leaves and pale green stems, Pak-Choi has a pronounced mustard flavor. A relative of Bok-Choy, this plant grows close to the ground
with an open head, similar to a blooming flower.
